Food safety and foodborne disease in 21st century homes
It is now accepted that many cases of foodborne illness occur because of improper handling and preparation of food by consumers in their own kitchens. This paper gives an overview of the role of the home in the transmission and acquisition of foodborne disease. It describes the increasing incidence of foodborne disease globally and the factors that impact food safety in the home. Measures on how to improve food safety in the home are outlined. Can.
